Homecooked noodles

For an easy meal rather than rice and dish, I will normally go for a soupy noodles.

prep + cook time: 30 mins (serves 1)

1 handful of noodles for 1 pax
1 handful of anchovies (ikan bilis)         
2 stalk of green veg
1/2 of the fish cake
5 cubes of tofu (choose tofu meant to be cooked in soup)
3 frozen pork chives dumplings (can go for other dumplings)
1 cut chilli

Wash all the ingredient separately

1. Bring water to boil and put ikan bilis for the soup for 15mins or until the water turn grey-yellowish color.
2. Meanwhile, pan-fried the slice fish cake. (No oil added - optional)
3. Put in the pork chives dumplings and use skewer to check on whether cooked.
4. Put in veg, tofu and noodles for 2 mins.
5. Serve piping hot with cut chilli and fish cake.




 



Refreshing Homemade Honey Lemon Juice

How about a glass of refreshing cold honey lemon juice in the hot weather?

prep + mixing time: 15mins (serves 4 glasses)

***

Freshly squeeze lemon (1/2 lemon)
Slice lemon (1/2 lemon)
Honey

***

1. Stir 3 teaspoon of honey in water. (use only plastic / wooden teaspoon)
2. Add in 2 teaspoon of lemon squeeze and 1/2 teaspoon of lemon pulps.
3. Add in ice.
4. Decorate with lemon slice.



Classic Butter Cake

A few days ago, I found Women's Weekly (100 classic cakes) in the library. 1st attempt to cakes as I was so busy in work past few years that I did not have the chance to baking. Love baking process and the cake turns out to be just nice. 


prep + cook time: 1 hour 30 mins, 2 tins (serves 16 - 18)

250g butter, softened (Liv unsalted)
1.5 teaspoon vanilla essence
3 eggs
200g caster sugar (275g for a more sweet cake)
335g self raising flour
180ml milk (full cream milk)

19cm deep cake tin
Baking parchment

 ***

1. Preheat oven to 180'C. Grease deep baking tin with line base baking parchment.
2. Beat butter, essence and sugar into medium bowl with electric mixer until light and fluffy. Beat in egg one at a time. Stir in sifted flour and milk.
3. Spread mixture into 2 tins. Bake at 120'C (to individual oven) about 45min with bottom heat and fan assisted. Or use skewer and comes out clean.
4. Stand cake in the tin for 5min before turning onto the wire rack to cool.
5. Sift icing sugar on the cool cake.
6.Serve warm or cold.
